Dinner last night: Creamy Butternut Squash Pasta

As I'm sure many of you have caught on I LOVE the fall.  One part of that is all the recipes that I want to try.  Every year I come across new foodie adventures.  Last night I made Creamy Butternut Squash Pasta.  Delicious.

I did make some changes because I can't (ever) help myself.  Fried up more sage and caramelized the onions in the same oil then added a couple drops of truffle oil.  All these things are to boost flavor without completely changing he recipe.

  • 1 medium butternut squash, peeled and diced
  • 3 tablespoons olive oil
  • 8 sage leaves
  • 12 ounces DeLallo whole wheat linguine (or other pasta)
  • 1 1/2 cups water or vegetable broth
  • 1 tablespoon olive oil
  • 1/4 cup diced yellow onion
  • 2 cloves garlic, minced
  • 1/8 teaspoon ground nutmeg
  • 1/4 cup freshly grated parmesan cheese
  • Salt and freshly ground black pepper, to taste
